  • 15 ounces 100% pure pumpkin puree
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons pumpkin pie spice

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 baking dish with aluminum foil, leaving an overhang on the sides, and grease lightly.
  2. In a medium bowl, mix graham cracker crumbs, melted butter, 2 tablespoons sugar, and salt until it resembles wet sand.
  3. Press the crust mixture firmly and evenly into the bottom of the prepared pan. Bake for 8 minutes, then remove and let cool slightly.
  4. In a large bowl, beat the softened cream cheese on medium-high speed until smooth and creamy (about 2-3 minutes). Scrape down the sides.
  5. Reduce mixer speed to medium-low. Add 1 ½ cups sugar and vanilla extract; mix until combined.
  6. Add pumpkin puree and pumpkin pie spice; mix just until uniform. Do not overmix.
  7. Crack eggs into a small bowl, then pour into the mixture. Mix on low speed just until the yellow disappears.
  8. Pour filling over the pre-baked crust and smooth the top.
  9. Bake at 350°F for 35-40 minutes. The edges should be set, but the center should have a slight jiggle.
  10. Cool in the pan on a wire rack for 1 hour, then cover and refrigerate for at least 4 hours or overnight before slicing.

Notes

Ensure cream cheese is at room temperature for a smooth texture. Do not overmix after adding eggs to prevent cracking. For clean slices, dip a knife in hot water and wipe dry between cuts. Bars taste better after sitting in the fridge for a day.
