  • 4 thick-cut bone-in pork chops (approx. 1.5 lbs / 680 g)
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 6 cloves garlic, minced
  • 1/2 cup all-purpose flour
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese (Parmigiano-Reggiano)
  • 1/2 cup low-sodium chicken broth
  • 1 tsp dried oregano
  • 2 tbsp fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Pat pork chops dry and season generously with salt and pepper. Dredge each chop in flour, shaking off excess.
  2. Heat a large skillet over medium-high heat with 1 tbsp butter and 1 tbsp olive oil. Sear chops for 3-4 minutes per side until golden brown. Remove to a plate.
  3. Reduce heat to medium. Add remaining 2 tbsp butter to the pan. Add minced garlic and oregano; sauté for 30-60 seconds until fragrant.
  4. Pour in chicken broth and scrape up browned bits from the bottom of the pan. Simmer for 1-2 minutes.
  5. Add heavy cream and simmer gently for 2 minutes until the sauce begins to thicken.
  6. Reduce heat to low. Whisk in grated Parmesan cheese until melted and smooth.
  7. Return pork chops to the pan, spooning sauce over them. Warm through for 1-2 minutes until internal temperature reaches 145°F (63°C).
  8. Garnish with fresh parsley and serve immediately.

Notes

Do not crowd the pan to ensure a good sear. Rest the meat for 3-5 minutes before serving to retain juices. For a gluten-free version, omit the flour dredge. For a dairy-free option, use olive oil and dairy-free cream alternatives.
