  • 1/2 cup dried mushrooms
  • 2 cups fresh mushrooms (cremini or button), sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried)
  • Salt and pepper to taste

Instructions

  1. Place dried mushrooms in a bowl and cover with hot water. Let soak for 10 minutes, then remove, chop, and reserve the strained soaking liquid.
  2. In a large pot, melt butter over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic and sauté for another minute until fragrant.
  4. Add sliced fresh mushrooms to the pot. Cook until they release their moisture and start to brown, about 8-10 minutes.
  5. Stir in wild rice, vegetable broth, reserved mushroom soaking liquid, and thyme. Bring the mixture to a boil.
  6. Reduce heat to low, cover, and simmer for 20-25 minutes, or until wild rice is tender. Stir occasionally.
  7. Stir in heavy cream and season with salt and pepper to taste. Let heat through for 2-3 minutes.
  8. Ladle into bowls and garnish with fresh parsley if desired.

Notes

If using dried mushrooms, save the soaking liquid for extra umami flavor. Wild rice absorbs a lot of liquid, so add more broth if the soup gets too thick. The soup lasts up to 4 days in the fridge and can be frozen for up to 3 months. For a dairy-free version, substitute heavy cream with coconut milk or cashew cream.
