Description

Soft, pillowy gluten-free and dairy-free pumpkin cinnamon rolls with a rich maple frosting. These rolls are made with a one-bowl method and feature a tender texture thanks to pumpkin puree.

  • 1 ½ cups (360ml) Unsweetened Almond Milk, warm (110°F)
  • 2 ¼ teaspoons (1 packet) Active Dry Yeast
  • ½ cup (120ml) Maple Syrup, divided
  • ¼ cup (60g) Coconut Oil, melted
  • ½ cup (120g) Pumpkin Puree
  • 1 teaspoon Salt
  • 2 tablespoons Ground Cinnamon
  • 1 ½ cups (180g) Confectioners’ Sugar
  • ¼ cup (60ml) Heavy Coconut Cream
  • 1 teaspoon Vanilla Extract

Instructions

  1. Bloom the yeast: In a stand mixer bowl, combine warm almond milk, 1 tablespoon maple syrup, and yeast. Let sit for 5-10 minutes until frothy.
  2. Mix the dough: Add melted coconut oil, pumpkin puree, 2 tablespoons maple syrup, and salt to the yeast mixture. Mix on low. Gradually add flour until a shaggy dough forms. Switch to dough hook and mix on medium-low for 5 minutes until tacky but not sticky.
  3. First rise: Transfer dough to a greased bowl, cover, and let rise in a warm spot for 1 hour until doubled in size.
  4. Shape the rolls: Preheat oven to 350°F (175°C). Pat dough into a 12×16 inch rectangle on a floured surface. Brush with melted coconut oil. Sprinkle with cinnamon and remaining maple syrup. Roll tightly and cut into 12 rolls. Place seam-side down in a lined 9×13 baking dish.
  5. Second rise: Cover rolls and let rise for 30 minutes until puffy.
  6. Bake: Bake at 350°F for 25-30 minutes until golden brown and internal temperature reaches 200°F.
  7. Make frosting: Whisk confectioners’ sugar, coconut cream, and vanilla until smooth.
  8. Frost and serve: Let rolls cool for 10 minutes, then drizzle with frosting. Serve warm.

Notes

Ensure yeast is bloomed properly to check viability. Do not rush the rising time for best texture. Frost rolls while warm, not hot, to prevent melting. Store leftovers in an airtight container at room temperature for up to 2 days. Do not refrigerate.
