Description
A quick, creamy, and spiced fall drink made with vanilla ice cream, pumpkin puree, and maple syrup. Ready in just 5 minutes with minimal cleanup.
Ingredients
Scale
- 2 cups vanilla ice cream
- 1/2 cup canned pumpkin puree
- 2–3 tablespoons pure maple syrup
- 1/2 cup milk (whole, oat, or almond)
- 1 teaspoon pumpkin pie spice
- 1/4 cup ice cubes (optional)
Instructions
- Ensure ice cream is scoopable; let sit on counter for 5 minutes if rock-hard.
- Combine vanilla ice cream, pumpkin puree, maple syrup, milk, pumpkin pie spice, and ice cubes (if using) in a blender jar.
- Blend on low speed initially, then ramp up to high. Blend for 30-45 seconds until completely smooth.
- Taste and adjust consistency with more milk or sweetness with more syrup/spice as needed.
- Pour immediately into tall glasses and serve.
Notes
Use 100% pure pumpkin puree, not pumpkin pie filling. For a thicker texture, use frozen banana or ensure ice cream is very cold. Can be made dairy-free or vegan by substituting plant-based ice cream and milk. Best served immediately as it melts quickly.
