Ingredients
- 1 cup (226g) unsalted butter, softened
- 1 cup (200g) granulated sugar, for dough
- 1 large egg, room temperature
- 2 teaspoons vanilla extract
- 2 1/4 cups (280g) all-purpose flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup (100g) granulated sugar, for rolling
- 1 tablespoon ground cinnamon
- 1 tablespoon melted butter, optional (for brushing)
Instructions
- Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy.
- Stir in the egg and vanilla extract until combined.
- In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt.
- Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
- In a small bowl, mix the 1/2 cup of granulated sugar with the cinnamon to create the coating.
- Scoop or spoon dough into 1 1/2 tablespoon balls. Optionally brush with melted butter, then roll in the cinnamon-sugar mixture until fully coated.
- Place cookies on prepared baking sheets, 2 inches apart.
- Bake for 9-11 minutes until edges are set and lightly golden, but centers still look soft.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack or eating warm.
Notes
Butter should be softened but cool to the touch, not melted. Do not scoop flour; spoon and level it for accurate measurement. Underbake slightly for chewy centers as cookies continue to cook on the hot pan. Store in an airtight container with a piece of bread to keep them soft for up to 5 days. Dough can be frozen for up to 3 months.
