Description

This 15-minute chicken fajita skillet is a one-pan weeknight miracle. Tender chicken, crisp peppers, and bold seasoning come together fast for zero stress dinner.


Ingredients

  • 1.5 lbs boneless, skinless chicken breast or thighs, cut into 1/2-inch strips
  • 2 large bell peppers (red and green recommended), sliced into strips
  • 1 medium yellow onion, sliced into strips
  • 12 tablespoons olive oil or avocado oil
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • Juice of 1 lime
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

  1. Slice chicken into 1/2-inch strips and slice peppers and onions into similar-sized strips.
  2. Heat a large skillet over medium-high heat and add oil.
  3. Add chicken strips in a single layer (cook in batches if necessary) and sear for 2-3 minutes without moving until golden brown. Flip and cook for another 2-3 minutes until cooked through. Remove chicken to a plate and set aside.
  4. In the same pan, add peppers and onions. Sauté for 4-5 minutes, stirring occasionally, until tender-crisp with a slight char.
  5. Reduce heat to medium. Sprinkle chili powder, cumin, garlic powder, onion powder, salt, and pepper over the veggies. Stir constantly for 1 minute to toast spices.
  6. Return chicken and any juices to the pan. Toss everything together to coat the chicken in the spice mixture. Heat through for 1-2 minutes.
  7. Turn off heat. Squeeze fresh lime juice over everything and toss. Garnish with cilantro if using. Serve immediately.

Notes

Do not overcrowd the pan to ensure the chicken sears rather than steams. Cut chicken and vegetables uniformly for even cooking. Let chicken sit at room temperature for 10-15 minutes before cooking for best results. Can be stored in the fridge for 3-4 days or frozen for up to 3 months.
