These chewy almond butter cookies are ready in just 20 minutes using pantry staples. No mixer is needed, making them the perfect quick snack or dessert for busy weeknights.

- 1 cup almond butter
- 1 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup mini chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium mixing bowl, combine almond butter, brown sugar, and granulated sugar. Stir vigorously until combined.
- Add the egg and vanilla extract to the mixture and mix until the dough is smooth and glossy.
- Add the flour, baking powder, and salt to the wet ingredients. Stir gently until just combined, being careful not to overmix.
- Scoop the dough onto the prepared baking sheet, spacing cookies about 2 inches apart. Roll into balls if desired.
- Bake for 8-10 minutes, or until edges are lightly golden but centers still look slightly soft.
- Let cookies cool on the baking sheet for at least 5 minutes before serving to allow them to set.
Notes
Do not overbake as cookies continue to cook on the hot pan. If using natural almond butter with oil separation, stir well or chill dough if too runny. For gluten-free, use a 1:1 gluten-free flour blend. For vegan, substitute egg with a flax egg.
