  • 1.5 cups sharp cheddar cheese, shredded
  • 2 tablespoons sour cream (optional)

  • 2 green onions, sliced

Instructions

  1. Prep ingredients: Dice onion and bell peppers, mince garlic, and measure spices.
  2. Brown the beef: Heat a 12-inch skillet over medium-high heat. Add ground beef and break it up with a wooden spoon. Cook until browned and no pink remains (5-7 minutes). Drain excessive grease if needed, but leave some for flavor.
  3. Sauté veggies: Add diced onion and bell peppers to the beef. Cook for 3 minutes until onions soften. Add minced garlic, chili powder, cumin, salt, and pepper in the last minute.
  4. Add rice and liquid: Stir in rice to coat in beef and oil. Pour in chicken broth and tomato sauce. Stir well and bring to a boil (2-3 minutes).
