Description
A single-serving vanilla cake made with pantry staples that costs under $1. It is moist, tender, and customizable, perfect for a budget-friendly treat that feels like a celebration.
Ingredients
Scale
- 0.5 cup (65g) All-Purpose Flour
- 0.33 cup (67g) Granulated White Sugar
- 2 tbsp (30ml) Vegetable Oil
- 3 tbsp (45ml) Milk
- 1 tsp (5ml) Vegetable Oil
- 0.5 tsp (2.5ml) Vanilla Extract
- 1 pinch Salt
- 0.25 tsp (1g) Baking Powder
- 1 tbsp (5g) Sprinkles
Instructions
- In a 6-8 oz microwave-safe mug or ramekin, whisk together the flour, sugar, baking powder, and salt until uniform.
- Make a well in the center and add the milk, 2 tbsp vegetable oil, and vanilla extract. Mix gently to incorporate, then whisk vigorously until the batter is smooth and thick.
- Gently fold in the sprinkles until distributed.
- Microwave on high for 90 seconds. Check the center; if wet, cook for another 30-60 seconds until set. Alternatively, bake in a preheated 350°F (175°C) oven for 15-18 minutes until a toothpick comes out clean.
- Let cool for 2 minutes before eating straight from the mug.
Notes
Do not overmix the batter to avoid a tough texture. Ensure baking powder is fresh for proper rising. Oil keeps the cake moister than butter. Can be frozen for up to 3 months; reheat in microwave for 30 seconds.
