Ingredients
- 1 cup (240g) 100% Pure Pumpkin Puree
- 2 cups (250g) All-Purpose Flour
- 1/2 cup (100g) Granulated Sugar (for dough)
- 1/4 cup (57g) Unsalted Butter, melted
- 1 large Egg
- 1 tsp Baking Powder
- 1 tsp Pumpkin Pie Spice
- 1/2 tsp Salt
- 1/2 cup (100g) Granulated Sugar (for coating)
- 1 tsp Cinnamon (for coating)
Instructions
- Preheat oven to 350°F (175°C). Grease a 12-cavity donut pan generously with melted butter or non-stick spray, ensuring the center holes are coated.
- In a medium mixing bowl, whisk together the flour, baking powder, pumpkin pie spice, and salt until uniform.
- In a separate bowl, whisk the melted butter, 1/2 cup sugar, egg, and pumpkin puree until smooth.
- Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined; the batter should remain slightly lumpy.
- Spoon the batter into the donut cavities, filling them about 2/3 full.
- Bake for 12-14 minutes, or until the tops spring back when lightly touched and a toothpick comes out clean.
- Let the donuts cool in the pan for 5 minutes, then transfer to a cooling rack.
- While the donuts are still warm, roll them in the mixture of 1/2 cup sugar and 1 tsp cinnamon until fully coated.
- Serve warm or store in an airtight container.

Do not overmix the batter to avoid tough donuts. Ensure baking powder is fresh for proper rising. If using a muffin tin instead of a donut pan, bake as cakes and cut out the centers after baking.
