Description

  • 4 tbsp unsalted butter (melted)
  • 3 cloves fresh garlic (minced)
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 3 tbsp mayonnaise
  • 2 tbsp sriracha sauce

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Pat salmon cubes dry with paper towels to ensure crispiness. Place in a large bowl.
  3. In a small bowl, mix melted butter, minced garlic, paprika, salt, and pepper. Pour over salmon and toss to coat evenly.
  4. In a separate medium bowl, combine panko breadcrumbs and parmesan cheese. Sprinkle over the butter-coated salmon and toss gently until evenly coated.
  5. Spread salmon bites in a single layer on the prepared baking sheet, ensuring they are not touching.
  6. Bake for 12-15 minutes until salmon is opaque, flakes easily with a fork, and edges are golden brown.
  7. While salmon bakes, whisk together mayonnaise and sriracha sauce to make the dipping sauce.
  8. Remove salmon from oven, let cool for 2 minutes to allow coating to crisp, and serve warm with sriracha mayo on the side.

Notes

Pat salmon dry before coating to prevent panko from sliding off. Do not crowd the pan; bake in batches if necessary to ensure crispiness. For a dairy-free option, use olive oil instead of butter and vegan mayo/nutritional yeast. Salmon continues to cook slightly after removal from the oven.
