  • 8 large eggs
  • 1.5 cups heavy cream or whole milk
  • 2 cups sharp cheddar cheese, shredded
  • 1 loaf bread (French, sourdough, or brioche), cut into 1-inch cubes
  • 1 medium yellow onion, diced
  • 2 tablespoons butter
  • Salt and black pepper to taste
  • Optional: Fresh spinach, chopped tomatoes, diced bell peppers, or bacon bits

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cut bread into 1-inch cubes and spread them evenly in a 9×13 inch baking dish.
  3. Heat a large skillet over medium heat. Add sausage and cook, breaking it into crumbles, until browned and cooked through (5-7 minutes).
  4. Add diced onion to the skillet in the last 3 minutes of cooking until soft and translucent. Drain excess grease.
  5. In a large mixing bowl, whisk eggs, heavy cream, salt, and pepper until uniform and slightly frothy.
  6. Pour the egg mixture evenly over the bread cubes in the baking dish.
  7. Sprinkle the cooked sausage and onion mixture over the top.
  8. Add half of the shredded cheddar cheese over the sausage layer.
  9. Bake for 45-50 minutes, or until the top is golden brown, the eggs are set, and a knife inserted in the center comes out clean. Cover loosely with foil if browning too quickly.
  10. Let the casserole rest for 10 minutes before cutting. Sprinkle remaining cheese on top while resting to melt slightly.
  11. Serve warm with fresh fruit or a side salad.

Notes

For best results, use day-old bread or toast fresh bread cubes lightly to prevent sogginess. This recipe can be assembled the night before, covered, and refrigerated. If baking from cold, add 5-10 minutes to the baking time. Resting for 10 minutes is crucial for clean slicing.
