- 3 cups cooked chicken, shredded (rotisserie or leftover)
- 1 cup red grapes, halved
- 1/2 cup walnuts, chopped
- 1/2 cup plain full-fat Greek yogurt
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon honey (optional)
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 stalk celery, diced (optional)
- 2 tablespoons red onion, finely minced (optional)
- 2 tablespoons fresh dill or parsley, chopped (optional)
Instructions
- Shred the cooked chicken into bite-sized pieces and place in a large mixing bowl.
- Toast the walnuts in a small skillet over medium heat for 2-3 minutes until fragrant. Let cool, then chop roughly.
- Wash and halve the grapes lengthwise.
- In a small bowl, whisk together Greek yogurt, mayonnaise, Dijon mustard, honey, lemon juice, salt, and pepper until smooth.
- Pour the dressing over the chicken and toss gently to coat evenly.
- Fold in the halved grapes and toasted walnuts. Add celery, red onion, or herbs if using.
- Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
- Serve cold.
Notes
Toast walnuts for better flavor. Use full-fat Greek yogurt for creaminess. Let chicken sit out for 10 minutes before mixing if it is very cold. Do not freeze this salad as the yogurt will separate. Store in the refrigerator for up to 4 days.
