- 12 large cage-free eggs
- 1 pound pork breakfast sausage (links or patties)
- 2 cups shredded sharp cheddar cheese
- 1/4 cup whole milk or 2% milk
- 2 tablespoons butter
- 8–10 large (10-inch) flour tortillas
- Salt and pepper to taste
- Optional: 1 cup frozen hash browns, 1/2 cup mild salsa, 2 chopped green onions, 1/4 cup Greek yogurt or sour cream
Instructions
- Heat a large 12-inch skillet over medium heat. Add the breakfast sausage (sliced or crumbled) and cook for 5-7 minutes, breaking it up with a spatula, until browned and cooked through (160°F). Drain excess grease on a paper towel.
- In a medium bowl, whisk the eggs with milk, salt, and pepper.
- Heat a medium non-stick pan over medium-low heat with butter. Pour in the egg mixture. Let sit for 30 seconds, then gently push edges toward the center until just barely set but still slightly wet. Remove from heat.
- Stack tortillas and microwave for 15-20 seconds wrapped in a damp paper towel to soften them. Alternatively, warm briefly in a dry skillet.
- Place a warm tortilla on a clean surface. Sprinkle a thin layer of shredded cheese on the tortilla to act as a glue.
- Add the scrambled eggs, cooked sausage, and any optional toppings (hash browns, salsa, green onions) to the center, leaving a 2-inch border at the top and bottom. Sprinkle a little more cheese on top.
- Fold the bottom edge up over the filling, fold in the left and right sides, and roll tightly from the bottom up to create a snug burrito.
- Serve immediately or wrap individually in plastic wrap and then aluminum foil for freezing.
Notes
Warm tortillas before rolling to prevent cracking. Use cheese as a ‘glue’ layer to prevent filling from sliding out. Cool filling slightly before assembling to prevent soggy tortillas. For freezing, flash freeze wrapped burritos for 1 hour before stacking to prevent sticking.
