Description
A quick and easy weeknight dinner featuring juicy chicken cubes threaded on skewers, coated in garlic, olive oil, and crispy Parmesan cheese, and cooked in an air fryer for maximum flavor with minimal effort.
Ingredients
Scale
- 1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
- 2 tbsp extra virgin olive oil
- 4 cloves fresh garlic, minced
- 0.5 cup freshly grated Parmesan cheese
- 1 tsp Italian seasoning blend
- 0.5 tsp red pepper flakes (optional)
- 0.5 tsp kosher salt
- 0.25 tsp black pepper
- Fresh parsley for garnish (optional)
Instructions
- Pat chicken breasts dry and cut into uniform 1-inch cubes. Place in a medium bowl.
- Drizzle olive oil over chicken and sprinkle with Italian seasoning, salt, pepper, and red pepper flakes. Toss to coat evenly.
- Thread chicken cubes onto metal or soaked bamboo skewers, leaving slight space between pieces.
- Sprinkle grated Parmesan cheese over the skewered chicken and gently press to adhere.
- Preheat air fryer to 400°F (200°C) for 3 minutes.
- Place skewers in the air fryer basket in a single layer without overlapping.
- Cook for 10-12 minutes, flipping halfway through, until internal temperature reaches 165°F (74°C).
- Remove from air fryer and let rest for 2 minutes before serving.
Notes
If using bamboo skewers, soak them in water for 30 minutes before use to prevent burning. Ensure chicken cubes are uniform in size for even cooking. Do not overcrowd the air fryer basket; cook in batches if necessary. Press Parmesan firmly onto chicken to prevent it from falling off and burning in the basket.
