- 1 cup fresh raspberries
- 1/2 cup fresh lemon juice
- 3–4 tablespoons honey or agave nectar
- 2 cups sparkling water or club soda
- Ice cubes
- Optional garnishes: extra raspberries, lemon wheels, or mint sprigs
Instructions
- Place fresh raspberries into the bottom of a large glass. Muddle gently for 15-20 seconds to release juices without crushing the seeds.
- Pour in fresh lemon juice and honey or agave nectar. Stir vigorously until the sweetener is fully dissolved.
- Fill the glass almost to the brim with ice cubes.
- Slowly pour sparkling water over the ice to preserve carbonation, allowing the pink base to swirl through the clear soda.
- Give the drink one gentle stir to mix the layers.
- Garnish with a lemon wheel, fresh berry, or mint sprig and serve immediately.
Notes
Do not over-muddle the raspberries to avoid bitterness from the seeds. If using honey, warm it slightly to help it dissolve in cold liquid. This drink is best served immediately as carbonation dissipates quickly. For parties, make a concentrate base ahead and add sparkling water just before serving.
